Vinification
Vinification with maceration and periodic reassembly for at least eight days.
Fining
Short ageing in stainless steel, cement tanks, and 5% barrel.
Colour
Ruby red in colour with dark and deep purple highlights.
Bouquet
Young nose that still bears traces of fresh tartness. Hints of ripe red fruit and notes of geranium and flint.
Taste
Prominent on the palate, the alcohol leaves immediately room for the sweet tannins. The consistency is a mixture of wool and old linen with a long-lasting aromatic presence.
Serving temperature: 16° - 17° C

Handmade aromatic salami, pasta with game, stewed kid with wild fennel and medium-aged cheese.
